Coming from 1982 old vines on a north facing slope, this wine was pressed direct to barrel, fermented and aged sur lie for 7 months in used French oak barrels. Frequent lees stirring and full malolactic fermentation make this wine all about texture and savory secondary expressions rather than a ripe fruit bomb. Proudly bottled unfiltered- embrace the sediment! Toasted almond, hazelnut butter, Parmesan cheese rind, salt, and oyster shell.
